For many people, ofto Kleftiko is synonymous with summer. Hot Cypriot summer evenings require loose clothing, an airy courtyard without too much fuss, cold beer and well-roasted, fragrant kleftiko accompanied by its potatoes, bulgur and fresh, cool salad! Kleftiko is one of the national foods of the Cypriots – it has been pre-approved by UNESCO for inclusion in the National List of Intangible Cultural Heritage – and is at its best every summer.
